Caramelized Pineapple Upside Down Cake

Indulge in a delightful Caramelized Pineapple Upside Down Cake, perfect for those who appreciate gourmet flavors. This simple recipe involves two main steps: preparing the caramelized pineapple and baking the cake.

Ingredients for Cake:

  • 1 can sliced pineapple in syrup

  • 1 cup (100g) flour

  • 7 tablespoons (100g) butter

  • 1 cup (100g) sugar

  • 2 eggs

  • 3 tablespoons pineapple syrup (from the can)

  • 1 teaspoon baking powder

For the Caramel:

  • 7 tablespoons butter

  • 1 cup sugar

  • Coconut powder pairs well with this cake.

  1. Caramelized Pineapple: Preheat oven to 350°F (180°C). Drain pineapple slices, reserving syrup. In a pan, melt 7 tablespoons butter over high heat, add pineapple slices and 1/4 cup sugar, caramelizing lightly.

  2. Cake Batter: Mix sugar and melted butter. Add eggs, whisking until smooth. Incorporate flour, pineapple syrup, and baking powder to achieve a smooth batter.

  3. Assembly: In a non-springform mold, arrange caramelized pineapple slices with syrup, then pour batter over them.

  4. Baking: Bake for 30 minutes. Turn out onto a plate shortly after removing from the oven to prevent caramel from sticking.

Enjoy this exquisite cake, reminiscent of the classic Tarte Tatin but featuring caramelized pineapple.
