Lava Cake

Lava Cake, distinct from Chocolate Fondant, boasts a fluid center with a firmer, cakey outside. While both share ingredients like butter, sugar, flour, eggs, and chocolate, it's their texture that sparks discussions among dessert aficionados.


  • 200g dark chocolate

  • 4 eggs

  • 140g (10 tablespoons) butter

  • ½ cup (100g) granulated sugar

  • 2 tablespoons (16g) flour


  1. Preheat oven to 460°F (240°C).

  2. Melt 175g chocolate and butter in a bain-marie or microwave, stirring until smooth.

  3. Whisk eggs and sugar in a separate bowl.

  4. Combine the egg mixture with flour and melted chocolate, stirring well.

  5. Butter 6 small molds. Fill halfway, add two chocolate squares to each, and cover with the remaining mixture.

  6. Bake for about 10 minutes. Serve immediately, optionally with powdered sugar or custard cream.

Note: The Lava Cake's signature runny center comes from adding a piece of chocolate or cold/frozen ganache in the center, melting perfectly when baked.
